Camille Hart disapproved of the word “diet”. It always seemed to her like punishment, a set of guidelines she had to go by instead than food she could enjoy.

She found greatest benefit from changing her perspective. She became fascinated with what was possible instead of emphasizing what was forbidden. She looked to herbs, citrus, natural fats, and innovative combinations of veggies and proteins because she had neither grains or dairy to count on. “The limitations compelled me to be more creative in the kitchen,” she says.
Her favourite evening activity turned out to be dining. Camille found the joy of preparing and eating meals that were substantial yet left her feeling light after a protracted period of depending on convenience foods. Though it was just thirty minutes after work, she began to become excited about her time in the kitchen.
