Lyla Pratt’s Mediterranean Meal Plan on a Budget

Lyla Pratt did not spend summers in Greece or grow up close to the sea, but something sparked the first time she experienced a classic Mediterranean meal.She remembers a simplicity and tenderness about it. “Olive oil, tomatoes, herbs — it felt like home, even if it wasn’t.”

She embraced the Mediterranean diet for the well-reputed health advantages as much as for the taste. Still, money was one factor preventing her from moving further. Many cookbooks and meal ideas called for imported goods or speciality items that would have been out of line for her limited shopping budget. But Lyla was not discouraged. She thought that everyone should be able to enjoy great, reasonably priced cuisine.

She so adjusted. She sought what her neighbourhood stores had to offer instead of imported olives or handmade cheeses. She used bulk cereals, seasonal veggies, canned beans, reasonably priced pieces of poultry and seafood. Her dinners evolved into a ballet of taste and economy, with herbs from her windowsill garden injecting bursts of life into even the most basic recipes.

Her minimal sacrifice astonished her most. < Her kitchen became a Mediterranean paradise with the correct mixes, free from cost.

Regular visitors at her table were handmade flatbreads, roasted eggplant drizzled with garlic oil, and bowls of steaming lentils topped with lemon and parsley.

“People believe you have to spend a lot to eat like this,” Lyla notes. “But, if you concentrate on the basics, it’s really one of the most reasonably priced ways to eat.”

The Mediterranean way of life for Lyla is not limited to cuisine. It’s about slowing down, dining with others, and appreciating simplicity. She is living evidence that even on a tight budget you can live well and eat elegantly.
