Thea Pike’s Heart-Healthy Recipes for One-Pan Meals

Thea Pike had always considered herself a food lover, but after a scare at her annual checkup revealed rising cholesterol levels, she realized she’d need to rethink not only what she ate, but how she cooked.

With a career that demanded long hours and a busy family life, Thea couldn’t dedicate hours to complex recipes. She needed meals that were simple, flavorful, and kind to her heart—and ideally, that could be cooked on a single sheet pan or skillet to minimize cleanup.

Determined, Thea began experimenting on Sunday afternoons, laying out vegetables, lean proteins, and heart-healthy fats on one baking sheet. She discovered that roasted salmon fillets drizzled with olive oil and sprinkled with fresh herbs emerged tender and flaky, while the vegetables around them became caramelized and sweet.

In another experiment, Thea placed skinless chicken breasts on a hot skillet, seared them with garlic and smoked paprika, and then added a handful of baby spinach and legume pasta to cook briefly in the same pan. The result was a saucy, vibrant dinner that needed no extra pots or bowls. “I felt like I was cheating,” she laughs, “because it tasted like I’d spent hours in the kitchen when really, it was just a few minutes of prep.”

Over time, Thea refined these heart-healthy, one-pan approaches. She learned that swapping white potatoes for sweet potatoes boosted fiber and antioxidants. She found that cooking lean turkey sausage with onions and peppers yielded a filling meal on its own, with minimal sodium and plenty of flavor.

And whenever she needed a vegetarian option, she’d toss chickpeas, cauliflower florets, and a cinnamon-turmeric seasoning blend onto her baking sheet—yielding a nutrient-packed dinner that felt both comforting and light.
