Combining convenience with health for Elena Bell is a kind of art. She swears by low-carb Mediterranean meals that fit her hectic life as a mother of three dietician.

“Mediterranean cuisine is naturally colorful and healthy,” Elena notes. “I concentrate on quick to make but highly flavorful recipes.”

Standard in her house is her Greek salad made with zucchini noodles. Replacing spaghetti, spiralized zucchini is tossed with olive, cherry tomato, cucumbers, and feta cheese. She points out, “It’s light, refreshing, and ready in 15 minutes.”

Her grilled chicken topped with a creamy tahini sauce is another crowd-pleasers. Following olive oil, lemon juice, and garlic marinating the chicken, it is cooked to perfection.

Elena says, “The tahini dressing enhances the meal and goes great with a side of roasted eggplant or bell peppers.”

Elena’s avocado tuna boats are really good for a fast lunch. Halved avocados she scoops out and stuff them with tuna, olive oil, and seasonings. “It takes less than 10 minutes to make, is filling and nutritious,” she says.

Elena’s basic belief is that “healthy eating doesn’t have to be complicated.” A few basic ingredients and some imagination will help you create dishes that satisfy your taste receptors and nourish your body.

Poppy advises varying the locations of your workouts for folks who like things fresh. She continues, smiling, “Go for a hike one day, do yoga in the park the next—it’s a great way to stay motivated.”
