Knowing that snacks would be her toughest obstacle when Zoe Perry chose to adopt clean eating, “I needed easy-grabbing snacks that fit my paleo way of life,” Zoe says.
For hectic mornings, her almond butter energy nibbles really save you. Perfectly sweet and fulfilling, these no-bake bits are made with almond butter, shredded coconut, and a little honey. She laughs, “They’re like small power balls of goodness.”
Her veggie-packed tiny frittas are also quite popular. Every Sunday, Zoe mixes up a batch combining chopped bell peppers, eggs, spinach, cherry tomatoes.
“They keep nicely in the refrigerator for a few days and are portable,” she explains. “Plus, they’re a terrific way to sneak in some extra veggies.”
Zoe’s handmade kale chips are difficult to match for a crispy snack. Before baking kale leaves to crispy excellence, she sprinkles them with olive oil and sea salt. “They’re far healthier than store-bought chips and quite addictive,” she says.
Zoe’s attitude to munching is entirely premeditated. “Staying on target is much easier when you have healthy choices on hand,” she says.
