Nina Ford’s Favorite Kitchen Hacks for Mediterranean Cooking

Chef and culinary educator Nina Ford notes, “Mediterranean cooking is all about fresh ingredients and bold flavors.” Her knowledge allows even novices to bring the vivid Mediterranean tastes to their kitchens.

Nina’s initial suggestion? Sort your pantry. “Keep basics like olive oil, canned tomatoes, chickpeas, and dried herbs handy,” she counsels. Many Mediterranean recipes start with these components.

Nina advises batch-prepping for working chefs. “Starting the week, roast a tray of vegetables or cook a large pot of quinoa,” she advises. You might toss them in grain bowls, wraps, or salads.

Her weapon of choice was secret. Orange. “A squeeze of lemon can turn any dish,” Nina says. Another trick is including yogurt as a flexible component. She notes, “It’s fantastic as a marinade, a sauce base, or even a dessert topping.”

With regard to proteins, Nina enjoys grilling. Grilling adds that smokey taste so unique of Mediterranean cuisine, whether it is fish, chicken, or eggplant, she says.
