Although beginning a new diet can be daunting, home cook and Mediterranean diet devotee Nora Bell thinks that simplicity is everything.

She also advises roasted vegetables topped with oregano and olive oil drizzles. “Pop them in the oven; you have a side dish that fits with anything.”

For someone who wants something substantial, Nora’s lentil soup dish is absolutely must-try. “It’s comforting, nouraging, and quite simple to prepare.”

Breakfast calls for Greek yogurt topped with fresh fruit, oats, and a sprinkle of honey. She comments, “It’s so simple but feels indulgent.” She also advises beginning for those unfamiliar with Mediterranean cooking with pantry basics such olive oil, tinned tomatoes, and dried herbs.
