Nina Starr promises by basic, clean-eating vegetarian dishes packed with flavor and nutrients for hectic weeknights.
Certified nutritionist and enthusiastic home cook Nina thinks cooking should be simple, enjoyable, and healthy.
“I don’t want to spend hours in the kitchen when I come home after a demanding day,” Nina says laughing. “My go-to quick, wholesome meals come from these recipes.”
1. Quinoa Bowl Mediterranean:
Fresh cucumbers, cherry tomatoes, creamy hummus, and quinoa rich with proteins abound in this dish. “For extra zest, I always drizzle a bit olive oil and a squeeze of lemon,” Nina says. Top it for a delicious variation with feta cheese or avocado.
2. Tacos made from sweet potatoes and black beans.
Among Nina’s friends and relatives, her tacos are a favorite. She advises roasting some chopped sweet potatoes with chili powder and cumin then serving them with black beans, salsa, and a dollop of Greek yogurt. Perfect for a hurried dinner, they are filling and delicious.
3. Stir-fry chickpea and spinach.
This stir-fry is absolutely perfect for something green and filling. For a warm, filling dinner toss spinach, chickpeas, garlic, and a little soy sauce in a pan. “It is quite flexible,” Nina says. If you are feeling creative, you may add bell peppers or mushrooms.
Nina wants to encourage others to embrace clean eating without compromising taste or time with her recipes. “Vegetarian cooking doesn’t have to be complicated,” she notes. “It’s about letting the components really shine.”
