Evelyn Cole’s Mediterranean-Inspired Lunches for Weight Loss

She also makes a basic quinoa bowl from roasted vegetables. Evelyn roasts eggplant, bell peppers, and zucchini with olive oil and herbs, then tosses them with quinoa and feta cheese.

Evelyn advises individuals seeking variation to try her Mediterranean tuna-stuffed tomatoes. She advises hollow out a tomato, mix tuna with Greek yogurt, capers, and parsley, then stuff it back in. “It’s light but filling.”
