Holly Lane’s Mediterranean Diet Recipes for Every Season

For enthusiastic home chef Holly Lane, the Mediterranean diet is a way of life rather than merely a diet. She notes, “I love how flexible it is.” “You can fit it to whatever ingredients are in season.”

Holly creates fresh herb and lemon pasta topped in the spring with artichokes and asparagus. She says, “It’s light, brilliant, and ideal for the season.”

Summer is all about vivid salads, like her feta and watermelon mix, matched with grilled fish. “There’s nothing better than dining outside with friends,” she says.

Holly turns to heartier foods, such as lentil stew and roasted veggie, when fall hits. She comments, “The warm spices make it so comforting.”

And in the winter? Her preferred is a thick tomato sauce baked eggplant Parmesan. Holly comments, “It’s cozy and satisfying without being heavy.”

Holly’s dishes highlight the richness and versatility of the Mediterranean diet. “You can find a dish that’s tasty and nouraging any time of year,” she explains. Her seasonal approach helps one to adopt this sensible diet easily.
