Ruby White’s Best Anti-Inflammatory Soups for a Cozy Evening

Ruby White looks to soothing soups that also fight inflammation when the temperature drops. Ruby says, “My perfect comfort food is soup.” “You can pack so many healthy elements into one bowl and it’s warm, nouraging.”

Her first choice is her Golden Lentil Soup. “Turmeric provides that lovely hue and anti-inflammatory action,” Ruby says.

She sautés onions, garlic, and ginger; she adds lentils, coconut milk, and vegetable broth; then she lets it boil till creamy.

Her tomato basil soup with a twist is another beloved. Ruby combines roasted red peppers for a smokey taste and works everything with fresh basil and a bit of olive oil. “It’s basic but so fulfilling,” she says.

Ruby suggests her Sweet Potato and Carrot Soup as a heartier variation. For a warm, fragrant bowl, this recipe calls for nutmeg, cinnamon, and ginger. She jokes, “It’s like a hug in a bowl.”

Ruby’s view? “Soup is a beautiful means of simultaneously healing your body and sooning your soul.” With foods like hers, cosy nights just get much healthier.
